Description / Cupping Notes
Big deep-toned flavors: chocolate covered raisins and cherries.
El Espino is owned and operated by the inimitable Gillio Ferraro. Classic rich and balanced Costa Rica cup profile. This lot was processed on Gillio’s nano-mill using the white honey method, which means a little fruit mucilage is left on the bean before drying. Variation on the pulped natural method, resulting in more fruit flavor than fully washed. Gillio’s mill is so small it fits onto a trailer; it is transported to the harvesting site for immediate processing.
NOTE: Coffee is at the Equator Warehouse in San Rafael, CA, but can be transferred to the Annex Doolittle in San Leandro.
