The varietal Yellow Bourbon from the natural mutation process, that occurs when a plan amends its DNA to better thrive in a new environment. This varietal is a mutation from Red Bourbon originally from the Isle of Bourbon. When it was planted in Brazil, the climate and soil conditions resulted in the development of yellow cherries. Bourbon Yellow has intense citrus sweetness and floral characteristics on the break with soft fruity and pineapple acidity with an overlay of honey-caramel sweetness and texture, resulting in a creamy aftertaste.
